A little bored with your everyday salad? Here’s a recipe to dress up your salad. This is a great dressing as it utilizes Extra Virgin Olive Oil, which we’ve learned is great for your health. With this dressing, Mesclun salad mix is preferably used as it can hold up to the bold flavor, but feel free to experiment with any other leafy greens you love to eat! When purchasing the EVOO, make sure you pick one that has a great fruity flavor. Enjoy!
- 2 tablespoons fresh Lemon Juice
- 2 tablespoons Dijon Mustard
- 1/2 cup Extra Virgin Olive Oil
- 1 minced Garlic
In a small bowl, whisk Lemon Juice, Dijon Mustard, and minced Garlic together. Add a sprinkle of Salt and Pepper. Slowly whisk in the Extra Virgin Olive Oil until emulsified. Taste for flavoring and add more salt if needed. Pour over the salad of your choice. Leftover portions can be easily stored in the refrigerator. Feel free to double up on this recipe! This recipe can also be made in a Mason Jar for easy storage.
