Twas the Night Before Christmas

Long long ago, not a sound could be heard. These days, that’s a bit of an understatement. Hoards of people are hustling and bustling everywhere trying to get out of town or get their Christmas shopping done. It can be pretty chaotic and I personally feel at times it takes away from the holiday spirit of the Christmas. Take a breather, and enjoy the holidays. On Christmas eve, how about taking a drive to see some Christmas lights? In Brea, CA there’s a street where the entire neighborhood block has the best light shows. Each year the houses do something beautiful and creative. They play music, they have adorable inflatables and beautiful decorations. Adults and kids absolutely enjoy it.
Let’s go back to where we enjoyed Christmas with families and friends, and it wasn’t just all about the gifts we received. I’m showering my nephews with gifts this year, but being able to celebrate this holiday with them is a blessing in itself for me.
I’m also aware that there will be a big after Christmas sale, but if you’re not in need of anything, enjoy the weekend. Also, those great deals are usually available online as well! =)
Since Christmas lands on a Friday entering the weekend, please drive safe and watch out for other drivers. Have a DD available if you’re hitting up those awesome parties. If not, there’s plenty of options available to get a ride home these days.
Onto more cheerful positive moods, let’s try a holiday drink! I’ve personally never had or tried eggnog, but it’s all the rage during the Christmas season. Here’s a vegan eggnog recipe from for you to try. Enjoy!
Vegan Eggnog
serves 2-4
2 cups Silk Unsweetened Cashewmilk, homemade cashew milk or other non-dairy milk of your choice
1/2 cup full fat coconut milk
1/3 cup raw cashews, soaked for at least 30 minutes (optional)*
4-6 Medjool dates
1 teaspoon vanilla extract
1 teaspoon freshly ground nutmeg
pinch of ground cinnamon
pinch of ground cloves
pinch of sea salt
Add all of the ingredients to your high speed blender and process until smooth and creamy. Serve immediately, as is or add spiced rum, bourbon, brandy or whiskey, for a spirited version. Add a pinch of freshly ground nutmeg on top.
