Vegan Banana Muffin

Ripe bananas make for delicious banana muffins.  This recipe is for half a dozen. Since the little munchkins have a heightened sense for flavor and smell, I eliminated vanilla extract but included the amount below. Feel free to add chopped walnuts in.

3/4 cups all-purpose flour
1/2 cup sugar
1/2 tsp baking soda
1/4 teaspoon salt
2 medium ripe bananas
2 tbsp + 2 tsp vegetable oil
1/2 tsp vanilla extract
2 tbsp chopped walnuts*

Preheat oven to 350°F. Line muffin tins with paper liners or with spray.

In a bowl, mix flour, salt, and baking soda together. In another bowl, mash bananas with a fork, add sugar then oil. Fold dry mixture in and mix until smooth.

Fill each muffin tin about 2/3 full. Bake 18-20 minutes or until toothpick comes out clean.
