
Roasted Heirloom Carrots
I recently went out to eat with a friend at a healthy restaurant and was inspired by one of the sides I ate. Here’s a recipe from that outing. You can pick up heirloom carrots from your local farmers market. I just love the colors on these carrots. They really do brighten up the dish. Enjoy!
Ingredients
- 10-15 Heirloom Carrots
- 2 tbsp Olive Oil
- 1 tsp Fresh Rosemary
- 1 tsp Fresh Thyme
- Salt
- Pepper
Directions
Preheat oven to 400 degrees. Peel carrots clean. Chop up fresh Rosemary and Thyme, set aside. Grab a baking sheet and toss carrots in olive oil, salt and pepper. Sprinkle on the Rosemary and Thyme, shake baking sheet evenly. Bake 20-25 minutes or until tender.
